CHERRY TOMATO MUFFINS
INGREDIENTS
• 340 g flour
• 4 teaspoons baking powder
• 150 g brown sugar
• 80 ml milk
• 60 ml sunflower oil
• 60 ml olive oil
• 3 eggs
• 2 sprigs cherry tomatoes
• 100g feta cheese
• 1 sprig of rosemary
• 30 g black olives
• 1 teaspoon salt
• Optional: 1 lemon cured in salt
PREPARATION
Mix flour, yeast, salt and brown sugar in a bowl. In another bowl mix the milk, oils and eggs. Put the two mixtures together without mixing them too much.
Add the chopped black olives, the rosemary leaves and the cured lemon to the dough in small cubes.
Fill the moulds with this preparation at medium height. Place pieces of feta cheese and cherry tomatoes cut in half. Cover with the dough up to the edge.
Cook 20 mins at 210 Cº. Ready!.
